    Barbeque Chicken Empty Barbeque Chicken

    Ingredients:
    3-4 lb chicken
    1 lime
    1 tbsp salt (to taste)
    2 Scallion, finely chopped
    2 garlic cloves, chopped
    1oz. ginger, grated
    1 - 2 tsp wirri-wirri peppers, chopped


    BARBEQUE SAUCE INGREDIENTS.
    1 1/4 cup tambarin pulp (Ripe)
    3-4 tbsp Demerara brown sugar
    ½ cup lemon juice
    ½ tsp allspice
    1 tbsp Salt (or to taste)
    1 tbsp Tomato paste (unsalted)

    Preparation
    Wash and trim away any extra fat from the chicken. (using the juice of 1 lime and some water to rinse the chicken). Season with ingredients. Put in a bowl, cover, and leave to marinate for an hour.

    For the sauce.
    Mix all ingredients together in a bowl until sugar is melted and all ingredients come together in a thick, sauce like consistency. Set aside

    Barbecue the chicken, or bake in an oven at 350°F for about 1 hour.
    If using an oven preheat oven at 400°F for 10 - 15 minutes.
    shake off excess seasoning from the chicken, Place chicken on baking pans, put into oven.
    Base chicken with barbeque sauce, put it in the oven on broil for half a minute - a minute (depending on the crispyness desired).
    Repeat on other side of chicken.
